Determined Day #129

If you are looking for some new recipes, I have two for ya!  First, you have to make Skinnytaste's Roasted Brussel Sprouts with Shallots and Balsamic Glaze that I made for dinner.  Delicious!  And then you MUST make Cooking Light's Roasted Plum Breakfast Parfaits.  Your family will love you for it.  Roasting the plums bring out a delicious flavor.  We had them for dessert instead of breakfast, but eat them whenever your heart desires. 


Morning Latte: 1 pt 

1 Homemade Latte (espresso and 1/4 cup frothed nonfat milk) = 1 pt





















Breakfast: 11 pts

2 eggs = 4 pts 
1 Aidell's Chicken Apple Sausage = 4 pts 
1/4 avocado = 2 pts 
1 cup spinach and onions sautéed in 1 teaspoon coconut oil = 1 pt 














Lunch: 5 pts

1 Morningstar Chipotle Black Bean Veggie Patty = 5 pts 
1 1/2 cups green beans with garlic = 0 pts 





















Snack: 3 pts 

1 1/2 ounces Orberto Peppered Beef Jerky = 3 pts 





















Dinner: 9 pts

4 oz chicken thighs with maple syrup and dijon marinade = 5 pts 
3 cups spinach = 0 pts 
1/8 cup carrots = 0 pts 
1/8 cup cucumbers = 0 pts 
1/8 cup yellow bell pepper = 0 pts 
2 tablespoons Ken's Fat Free Raspberry and Pecan dressing = 1 pt 





















Dessert: 8 pts 

1 serving Roasted Plum Parfait = 8 pts
