Determined Day #139

I typically steam cauliflower, which gets a little boring.  Tonight I tried a new recipe from Cooking Light magazine that had me mashing them up with hashbrowns and other ingredients, then lightly frying them.  They were DELICIOUS!  I can't wait to make them again.  The dipping sauce was yummy, too. 


Breakfast: 9 pts

2 eggs = 4 pts 
1 cup bell peppers and onions = 0 pts 
1 teaspoon coconut oil = 1 pt 
1 Aidell's Chicken Apple Sausage = 4 pts 
Fresh basil = 0 pts 






















Snack: 0 pts 

1 1/2 cups strawberries = 0 pts 





















Lunch: 12 pts 

2 slices Papa Murphy's Chicken Bacon Artichoke pizza = 12 pts





















Dinner: 12 pts 

1 serving Crisp Cauliflower Fritters = 6 pts
1 cup lettuce = 0 pts 
1/4 cup carrots = 0 pts 
1 tablespoon Wishbone Balsamic Vinaigrette = 1 pt 
1 1/2 cups grilled zucchini, yellow squash and onions = 0 pts 
1 teaspoon olive oil = 1 pt
4 ounces roasted salmon = 4 pts 





















Dessert: 2 pts

1 Fiber One Mint Fudge Brownie = 2 pts
