Determined Day #164

I was super hesitant about taking a bite of the Root Beer Sloppy Joe that I made for lunch today.  OMG.  It was SO good!  If you make it, be sure to use a good quality, strong root beer - don't use a weak one.   This recipe can also be made ahead of time.  I cooked it in the morning, threw the pot/lid in the fridge, and reheated it just before serving. 


Breakfast: 7 pts 

2 eggs = 4 pts 
1 cup onions and mushrooms sautéed in 1 teaspoon olive oil = 1 pt 
2 slices turkey bacon = 2 pts 
fresh basil = 0 pts 





















Snack: 4 pts 

1 Goodfoods Tableside Chunky Guacamole single = 2 pts 
1 cup baby carrots = 0 pts 
1 string cheese = 2 pts 





















Lunch: 9 pts 

1 Root Beer Sloppy Joe = 9 pts 





















Dinner: 12 pts 

1 serving Vietnamese Caramel Pork = 10 
1 serving roasted brussel sprouts with 2 teaspoons olive oil and thyme = 2 pts
